Delicious and Easy Recipe: Black Bean & Lime Rice
Cook one cup of dry rice with 2 cups of low sodium chicken broth. In a separate bowl mix black beans, drained, and a can of corn, drained. Mix in 2 tablespoons of lime juice, 2 tablespoons of chopped cilantro, and salt, garlic powder, cayenne pepper, and black pepper to taste. When the rice is finished cooking, mix it in with everything else.
This recipe is easy and requires minimal effort. It’s healthy and can be made in just 30 minutes. You can easily add chicken, and grilled bell peppers. This rice goes really well with fajitas. Just grill up some chicken, peppers, onions, and warm some tortillas.
